Gastronomy: an approach to studying food
An article I wrote for Nutrition and Food Science journal in 2014 on the reconceptualisation of Gastronomy as an interdisciplinary study of food. You may need additional access, but if you're part of an academic institution, you will be able to read the full article here.
I also wrote about the rationale behind the degree in the Sustainable Food Trust blog, around about the same time. This argues that the predominant way we think about food across education, industry and agriculture, tends to be damagingly reductionist. Although it would be crazy to claim the MSc Gastronomy has all the answers, at very least, the practice of attempting to establish a new framework for reconceptualising our understanding of food is necessary and worthwhile; particularly when we take a look at the worrying state of public health, environment and food economy.
