Geoff Tansey - author of The Food System and creator of the Food Systems Academy - interviews Stan Blackley and I about the MSc Gastronomy.
Geoff lectures with the MSc Gastronomy every year, introducing the students to the concept of a 'food system' and how to apply systems thinking to complex concepts.
Since this video was made, Stan and I have swapped roles, with him now being the programme leader of Gastronomy and me being a lecturer.
